Chocolate Chip Cookies

Have you ever had one of those days where you just needed a cookie?  Last Sunday I had one of those days.  It started with my neighbor calling me to tell me that his car had been broken into.  After offering him my sincerest apologies, I walked outside to discover my car was broken into as well.  Luckily there was nothing of value to take.

Later in the day I noticed a burning smell coming from my desktop.  My husband opened the side to check things out. Long story short we had to purchase a new computer. 

It was getting late and my husband and I were in no mood to cook so we decided to grab dinner from our favorite pizza place.  After the hassle of driving downtown and paying for parking, the sign on the restaurant door said, Closed on Sundays!  My kids were hungry and I was frustrated so we settled for drive thru.  

After the stress of the day's events, I needed a distraction.  So why not bake something!  When I bake I feel less stressed.  Making a batch of homemade cookies is my favorite form of stress relief.

To be honest chocolate chip cookies aren't my favorite, but I was trying to cheer up my disappointed family.

I used a recipe I found online from allrecipes.com  The secret ingredient is cream cheese.  I love the idea of adding cream cheese to cookies!  These were a hit in my house and seemed to do the trick.  In the end I realized these weren't huge problems.  Nothing a plate of warm cookies couldn't fix!

Ingredients 
2 & 1/2 cups all-purpose flour 
1 teaspoon baking powder 
1/2 teaspoon salt 
1/2 cup unsalted butter, softened 
8 ounces cream cheese, softened 
1 cup granulated sugar 
1 cup packed light brown sugar 
2 large eggs 
1 & 1/2 teaspoons vanilla extract 
1 & 1/2 cups semisweet mini-chocolate chips 


Directions 

Grease or line baking sheets.  Whisk together flour, baking powder, and salt.  Set aside.  Beat butter, cream cheese, sugar, and brown sugar until fluffy.  Add eggs, 1 at a time, mixing well after each addition.  Mix in vanilla.  Gradually add flour mixture, mixing until almost combined.  Add chocolate chips, stirring until dough is thoroughly mixed.  Cover mixing bowl with plastic wrap and refrigerate the dough for a minimum of 2 hours.  Preheat oven to 350 degrees.  Drop dough by rounded tablespoonfuls onto prepared baking sheets.  Bake 12-15 minutes, or until edges are lightly browned.

  7. Wow...that's a crazy kind of day! Sorry for the losses, but thankful that everyone is "ok".
    My guys LOVE chocolate chip cookies and I think these will be a HIT! Like you, I'm not a big fan of them, but throw a little cream cheese in there and I'm in! ha ha

    Your cookies look delicious. I've e been a fan of allrecipes.com for a long time. I like the reviews and have never had a failed recipe from there if I check the reviews first.

  10. I'm so sorry about those events. Those things sure aren't fun to deal with. Cookies can definitely make things a little brighter, can't they? :) I LOVE the idea of adding cream cheese to cookies! Cream cheese makes everything taste better in my book. :)

    Unfortunately assaults increased in my City. Be inside the bus, whether on the streets and also broken into.

    I have a dear friend who recently suffered a "kidnapping lightning/sudden" = "sequestro relampago". Her car was found by police she but lost money, credit cards and smartphone.


    My daughter loves cookies, I had no recipe and I will cook with her the next weekend ... hummmm.... delicious cookies.

  20. Yep! Bad days happen, but there is so much to be thankful for, in the midst of chaos. That's what my grandma used-to say and I carry it around in my heart.   29. Have you ever read the book Alexander and the Terrible, Horrible, No Good, Very Bad Day? My boys have it and I think of it every time I have a day like that. We had our car broken into once and felt so violated...I'm sorry it happened to you!

    My 4 year old got home from pre-K the other day and declared "I know how to get ready for Christmas!" When I asked him how, he declared "We make cookies." So, we made chocolate chip cookies to get ready for Christmas.
