I've been busy in the kitchen lately making new things. It's been fun to experiment with different ingredients.
I had a few mushy bananas to use up so I went to the computer in search of a recipe. I found an easy recipe for banana-chocolate chip muffins. Normally I like nuts in my banana muffins, adding the mini chips got the chocolate lovers in my house buzzing!
These muffins were easy and delicious, perfect for breakfast or a yummy snack!

Ingredients
2 cups flour
3/4 tsp baking soda
1/2 tsp salt
1 cup sugar
1/4 cup butter, softened
2 large eggs
3-4 very ripe bananas, mashed
1/2 cup canola oil
1 tsp vanilla
1/2 cup mini chocolate chips(you can add more if you like)
Preheat oven to 325 F. Line muffin tray with paper liners. Sift flour, salt and baking soda into a mixing bowl. Stir in sugar. In a separate bowl, using a whisk, lightly beat eggs and butter. Stir in oil. Add to dry ingredients, along with mashed banana. Using a wooden spoon, gently mix ingredients until combined. Stir in choc chips. *Don't over mix the mixture or the muffins will be tough. Spoon the mixture evenly into the muffin liners. Bake for 18-20 minutes or until firm on top when lightly touched. Transfer the muffins to a rack to cool. Enjoy with a glass of cold milk!

The weather is gorgeous here too. I like baking more than cooking, but I'm fighting the battle of the bulge right now. These muffins sound delicious and have two things that I love chocolate and bananas. Yummy. I'm going to file this for future reference.

ReplyDeleteThese look so delicious, Brandi! These are the types of things I miss since having to go gluten free several years ago. You just can not find baked goods that taste like those with wheat flour. I've come close, but I still remember what the "regular" type tastes like!

Funny, I made banana loaf last Sunday with chocolate chips too! Although mine wasn;t from scratch - used Trader Joe's mix and added fresh bananas and chocolate chips!Super moist and yum! Must try yours Brandi!
ReplyDeleteIt's always a toss up around here; nuts or chips. We don't enjoy Banana Muffins as much if they have both. (strange I know:) I'm always in favor of chips because, hey, a girl just needs bits of chocolate every now and again when she's trying to get her daily serving of fruits, lol...
