Fried Eggplant

I love vegetables; raw, roasted, grilled or fried.  We live near an amazing farmers market and are fortunate enough to be able to enjoy a wide variety of fresh fruit and vegetables.

Eggplant can be prepared many different ways; Eggplant Parmesan, Eggplant Lasagna, roasted or grilled.

One of my favorite ways to enjoy it is fried.

My kids, who do not like eggplant, ate every single bite and asked for more!


Ingredients
1 large eggplant, sliced into 1/4 to 1/2 inch thick slices.
2 eggs, beaten
2 cups all-purpose flour
Salt and pepper to taste
Canola oil for frying
Marinara sauce, optional

Directions
Heat canola oil in a large skillet over medium-high heat.  Dip eggplant slices in egg, then in a separate bowl combine flour, salt and pepper.  Dredge each piece of eggplant in the flour, coating thoroughly and then shaking to remove any excess flour.  Fry eggplant for about 3 minutes on each side, or until golden brown. Transfer to paper towels to drain.  Serve with marinara sauce, if desired.

  1. Yum! I love eggplant. Only one in the family that does. I grew up eating my Granny's eggplant parmesan and have yet to find someone who can cook it the same way.

  6. Oh, boy, this looks wonderful! Maybe I can finally get my hubby to like eggplant with your recipe...he's definitely like a picky child when it comes to certain foods ;)

  8. I've never tried eggplant before. I believe my refusal stems from having seen one as a child, and it looked too different for my taste. Lol.

    Judging from the images it probably tastes good though. Sorta like friend zucchini? I remember when i didn't too much care for squash and now I love it.

  12. Hi! I found you through www.homestoriesatoz.com on her link up party. I love fried squash (the smaller yellow crook neck variety you can get at the produce section). Have you ever tried it? I will have to try it with eggplant sometime. I think it would be similiar and looks delicious!

  20. Hi Brandi! Just saw this recipe over on Summer's blog! Thank you so much for sharing it. I planted eggplant in my garden for the first time ever this year and they have been producing like crazy. I didnt grow up on eggplant so I had no idea how to prepare it so Ive been giving them to coworkers and friends. I am definitely going to give this recipe a try the next time I harvest one. Im a southern girl so I can definitely get down with a good fried something recipe!!

  21. My mom fried eggplant often when I was growing up. Loved it! Yours looks soooo good. I don't fry anything these days; but that might have to change. I have a feeling those eggplants slices are going to stay with me until I do. :)
