Growing up I always associated pound cake with funerals. Sounds weird huh?! Well, let me explain... My father was an undertaker. I was exposed to his work at many levels. I grew up visiting my dad at work and offering a hand at funeral services. A meal often followed the service, called a repast. The church family often provided this meal for the family members. The meal would usually consist of the main course, a beverage and dessert -pound cake! My father would faithfully bring home leftover pound cake, for my siblings and myself to enjoy!
This pound cake is delicious and moist. It’s wonderful fresh out of the oven, and even better topped with strawberry whipped cream. And so, this recipe is for my dad and the sweet church ladies who inspired me to cook.
Ingredients
- 1 (8 ounce) package cream cheese
- 1 1/2 cups butter
- 3 cups white sugar
- 6 eggs
- 3 cups cake flour
- 1 teaspoon fresh lemon juice
- 2 teaspoon vanilla extract
Directions
- Grease and flour a 10 inch bundt pan.
- In a large bowl, cream butter and cream cheese until smooth. Add sugar gradually and beat until fluffy.
- Add eggs two at a time, beating well with each addition. Add flour and beat well. Add vanilla and lemon juice.
- Pour batter into bundt pan. Place in a cold oven( in other words, do not preheat your oven), and bake at 300 degrees for 90 minutes or until a wooden toothpick inserted in center comes out clean.
Strawberry Whipped Cream Recipe
- 1 C heavy whipping cream
- 1/3 C powdered sugar
- 6 large ripe strawberries, mashed
Makes about 2 cups of frosting.

Wow Brandi - I bet you have a few good stories from your Dad's work! I think this pound cake sounds delicious, especially with the lemon in the batter and that frosting. Yum.
ReplyDeleteGrowing up in the south, I can completely understand why you would associate pound cake with funerals. Out of all the relatives that I have had pass away over the years, pound cake is usually the first thing that shows up at the house following the death and there is usually more than one that makes an appearance. Thank goodness they are so delicious, right? Yours looks fantastic especially with the strawberry whipped cream. I could eat that on my finger alone. :)

I sooo understand where you're coming from. Pound cake was "the funeral cake". LOL! I've never tried to make my own. I just always wait on my mom to make one. But you've inspired me!

ReplyDeleteMy best friend growing up was the daughter of an undertaker. We spent lots of time at the funeral home hanging out. Because of that those pastel mints remind me more of funeral homes than weddings! This cake looks delicious! I would have never thought to top it with strawberry whipped cream! Thanks for sharing!

ReplyDeleteAnd on a bit of a related note, my grandma used to work at a funeral home, so I used to walk from school to the funeral home to have lunch with her. My classmates thought it was very creepy.

When I make fresh vegetable soup we both think of our childhood when money was scarce but veggies were plentiful.

ReplyDeleteAssociations are funny things. Rotten roast beef reminds me of vultures, in a good way. We took care of a vulture that was hit by a car for a while. My dad put a pin in it's wing and we looked after it until we found it a home in a bird sanctuary.
