Fruit and Cream

I don't know if this goes for anyone else, but the hotter the weather gets, the colder and more refreshing my food is.  In the summer I start to crave ice cream, water ice, and MILKSHAKES! Unhealthy, I know, but those are my go-to foods for the hotter months.  So, I decided to switch up the normal craving and made a fruit and cream salad.

Using the season's fruit and a homemade whipped cream is the perfect amount of sweetness and tartness to curb my sweet tooth.  I used to dislike kiwi, but having it in a fruit salad is perfect!  And leftovers get even better when they settle in the fridge with their own juices and sugars.  It's like a fruity ice cream without the guilt and crazy sugar high!

My children love it too!  My son is particularly picky with desserts and salads, but he loved it so much that he got seconds. It's a light, refreshing treat that cools you down in the sweltering heat and it's sweet enough to ease the craving for sugary sweets! 

Ingredients- Fruit 
fresh blueberries 
fresh strawberries (cut into slices)
fresh blackberries 
kiwi (skin removed and cut into slices)
sliced almonds for garnish (optional)

Ingredients- Cream

1 cup heavy cream 
1 teaspoon vanilla extract 
1 tablespoon confectioners' sugar 

In a large bowl, whip cream until stiff peaks are just about to form.  Beat in vanilla and sugar until peaks form.  Be sure not to over beat.  Cover and refrigerate.  

Wash fruit and slice strawberries and kiwi.  Throw all fruit in a bowl and toss with a little sugar.  Set covered bowl of fruit in fridge for about an hour to chill.  Remove from fridge and top with cream and sliced almonds.  Enjoy!  Refrigerate any left overs.

  4. Num! Here in Oregon, the fresh fruit is so bountiful that at least once a week I'm pulling over to get more fresh berries. This treat with cream is heavenly. I also adore vanilla yogurt and mixing vanilla yogurt with berries and fruit tastes like a really decadant dessert!

    I must remember to include almond slices though. That would really make it killer!

  5. Brandi I LOVE kiwi and that fruit spread looks so good. The whip cream is always a great addition in my book! Ice cream on Sundays is a must!

  6. I crave fruits more in summer and typically eat lighter...the heavy food and heat doesn't mix well in my tummy. Hope you're having a great summer!

  11. Cooking is terrible in the summer heat! I love making fruit salad with vanilla yogurt...I'd never thought of using whipped cream before.

    We also love making fruit smoothies in the blender with fruit, ice and yogurt.

  18. It's so amazing to me how the most simple of dishes make the most beautiful. Fresh cream and fruit is a summer treat that cannot be beat by anything else. All those wholesome seasonal ingredients are irresistible.
