Growing up I really disliked Brussels sprouts. Maybe it was the way my parents fixed them, boiling them in a pot of salted water left much to be desired. As I grew older I remember trying them again and was pleasantly surprised how much I enjoyed them. Over the years I have made them several different ways, but I enjoy them best roasted with beer and bacon. Beer and bacon! This may be the best thing to come out of my kitchen in a long time.
My husband and I like to cook with dark beers. You can add extra flavor to your recipes by replacing all or most of the water required with beer. We have used Guinness a lot in cooking. Last week while grocery shopping we happened upon Yuengling and decided to give it a try. We thoroughly enjoyed it. It's not as strong as Guinness, yet the flavor is very distinct. Needless to say we haven't purchased Guinness since!
I love the convenience of roasting vegetables. After very little prep work, I simply placed all the ingredients in a pan and while they're roasting I am free to do other things while dinner is in the oven.

Ingredients
2 lbs Brussels Sprouts
6 oz bacon, chopped
1 onion, peeled and sliced
12 oz bottle beer, Yuengling
1/2 tsp salt
1/4 tsp pepper
Directions
Preheat the oven to 375 degrees. Wash and peel off any loose or damaged leaves from the sprouts, then trim the root ends. Add the Brussels sprouts to a large roasting pan and season with salt and pepper. Add the sliced onion, then add the chopped bacon. Pour the bottle of beer into the pan and cover with aluminum foil. Place the covered pan in the oven and roast for 25 to 30 minutes, turning several times. Roast until the Brussels sprouts are tender and caramelized and the bacon is golden.

ReplyDeleteI don't drink but I love to cook with alcohol. I think it must be all the sugars or something. When I make a stew I never add water. I only use beer. Usually a nice light lager. Often, the cheaper the beer the better so here I am, the person who doesn't drink, in line at the supermarket with stew fixin's and a 40. It makes me feel "almost" cool.
Also, another lovely way to eat brussel sprouts is oven roasted and drizzled with butter and vinegar. My mom swears by a red wine vinegar but I like an aged balsamic. It cuts the bitter brussel sprout tang.

I normally love everything you cook on here but today is not the day lol. No brussel sprouts for me of any kind that squash, and beans is a no no. (on the sly though it does look good)

Okay Brandi, I'm not ashamed to admit that I HATE brussels sprouts, but I'm going to give this one a try. I remember even the smell of them making me sick as a child, but I did try them again a few years ago, just to see if maybe my taste buds had changed. I'm sorry to say they hadn't. ReplyDeleteI used a dash of brown sugar and a shallot in it, along with the ingredients you used. It was quite tasty.
Oh and I went with a Michelob Amberbock rather than a Yuengling or a Guinness.

ReplyDeleteSo Dave and I rented a really nice condo in Leavenworth Wa. We could cook meals in. We fixed rib eye steaks and brussel sprouts. We cooked the sprouts in obsidian stout beer. We used montreal steak seasoning and garlic threw in some sliced mushrooms and onions and poured in the beer. This is in a frying pan...let the beer cook down and carmelize the sprouts. Done. That was three years ago. We still talk about it. We'll do it again sometime. Yep.
