Summer is here and for my family that means a relaxed schedule and easy weeknight meals.
Shrimp tacos have become our new favorite dinner. This is a great summer meal, quick and easy to pull together and tastes great.
Spicy grilled shrimp, combined with fresh arugula, shredded cheese, dried cilantro and warm tortillas. For the sauce we used Yum Yum or shrimp sauce typically served at Japanese steak houses. The sauce goes great with just about anything, we enjoy it best on our tacos.
The sauce can be hard to find in most grocery stores, but is available to purchase online here. Unfortunately it's much more expensive online.
With just a little effort, you can still enjoy a nourishing home-cooked meal and allow yourself plenty of time to enjoy those summer nights!

2 pounds large shrimp, peeled and deveined
1 large clove garlic
1 teaspoon coarse salt
1/2 teaspoon cayenne pepper
1 teaspoon paprika
2 tablespoons olive oil
1 (8-ounce) bag of shredded Asiago Cheese
10 flour tortillas
1 (5-ounce) bag fresh arugula leaves
Yum Yum sauce
2 tablespoons cilantro
Directions
Preheat grill for medium heat. In a large bowl, crush the garlic with the salt. Add in cayenne pepper and paprika, then stir in olive oil. Toss shrimp in mixture until evenly coated. Lightly oil pan for cooking. Cook shrimp for 2 to 3 minutes per side, or until opaque. Set aside. To warm tortillas, place the tortillas in a dry (no oil) skillet over medium heat and cook them for about 30 seconds on each side.
To assemble tacos, spread desired amount of Yum Yum sauce over warm tortilla. Place arugula leaves over sauce. Sprinkle shredded Asiago cheese over arugula. Add cooked shrimp and top with cilantro. Serve and enjoy!
I love shrimp, and this meal looks tasty and easy :)
ReplyDeleteYum! They look delicious. Wonder if the farmer's market carries that sauce. They tend to have hard to find items. We were down that way earlier today.
ReplyDeleteYum Yum!!!!!
ReplyDeleteI'm drooling Brandy, this sounds delicious and looks pretty too. I'm going to have try yum yum sauce.
ReplyDeleteThere you go making a mouth watering meal that not only looks outstanding to where I could eat the monitor and I bet the taste left you wanting more. I do adore shrimp and we just purchased some and I have whole grain soft shells so this will sure be on the memu this coming week.
ReplyDeleteDid you get the shrimp from the farmers market? I have always loved their seafood. I will miss not going there but it would be a 68 mile round trip now from our new place and not to mention the hour or more just to get there due to the traffic on 124 to 78...
I think I will break down and drive it soon, I will give you a shout to see if you want to meet up.
I love eating shrimp, squid and octopus. These recipes are excellent tips.

ReplyDeleteThis does sound good!
ReplyDeleteYum Yum sauce is incredibly easy to make with ingredients most likely found in kitchens all over the United States. Google Yum Yum Sauce recipes and you'll find the most common ones include mayo, tomato paste, butter, garlic powder, sugar, paprika and cayenne pepper. Sounds like it would take minutes to make, and be much less expensive than buying it already prepared.
This recipe looks delicious !!
ReplyDeleteBrandi, that looks WONDERFUL! And your pictures are gorgeous! I had to chuckle though...around here, an "easy weeknight meal" would be takeout! ha ha....I would love to come and eat at your house for a week! :) I'm giving this one a try for sure. Just have to go find some of that sauce. Thanks for sharing it with us. Hope you had a wonderful weekend!

ReplyDeleteThis looks delicious. I went shopping to 3 different stores up here in Michigan and could not find this bottled sauce. When I stopped into Whole Foods, the man that helped me with trying to find this said that he was a chef prior to working at the store and told me to google the recipe. There are many on the internet and and I am trying it today. You probably have most of the ingredients as staples in your pantry. But, thanks again for posting this. I have not heard of the sauce and you introduced me to another flavor?sauce.
